Step 1: Soak the Dried Fruits
- Wash: Thoroughly wash the dried fruits (dates, plums, cranberries, raisins, and apricots) under running water.
- Soak: Place the washed dried fruits in a bowl and cover them with water. Soak for about 20 minutes until they soften.
Step 2: Toast the Nuts and Seeds
- Chop: Use a knife to chop the walnuts into smaller pieces.
- Toast: In a dry skillet over medium heat, lightly fry the almonds and sesame seeds for about 3-5 minutes until golden and fragrant. Stir frequently to prevent burning.
Step 3: Combine the Ingredients
- Mix Nuts and Oats: In a deep plate, combine the toasted nuts, pumpkin seeds, sesame seeds, and oat flakes.
- Add Dried Fruits: Remove the soaked dried apricots from the water, chop them, and add to the nut mixture along with cranberries and raisins. Mix well.
Step 4: Blend the Dried Fruits
- Drain: After soaking, drain the dried fruits.
- Blend: In a blender, combine the pitted dates and soaked plums. Blend until you achieve a smooth paste. This will serve as your natural sweetener.
Step 5: Create the Dessert Mixture
- Combine: In a large bowl, mix the blended fruit paste with the nut and seed mixture. Stir until fully combined, ensuring the mixture is sticky and cohesive.
Step 6: Shape and Freeze
- Shape: Take the mixture and form it into a sausage-like log shape.
- Coat: Roll the log in sesame seeds for added texture and flavor.
- Freeze: Wrap the log in parchment paper and place it in the freezer for about 2 hours to set.
