A delightful fusion of Mediterranean flavors, Greek Chicken Gyros offer a hearty meal that transports you to the streets of Greece. The marinated chicken, fresh vegetables, and creamy tzatziki come together to create a dish that’s perfect for any occasion.

1. Marinate the Chicken:
- In a ziplock bag, combine all marinade ingredients and massage to mix. Add the chicken and coat it thoroughly.
- Marinate for at least 2 hours, preferably 3, but ideally 12 hours for the best flavor. Avoid marinating for more than 24 hours.
2. Prepare the Tzatziki Sauce:
- Cut the cucumber in half lengthwise and remove the seeds with a spoon. Coarsely grate the cucumber, then wrap it in paper towels to squeeze out excess liquid.
- Combine the cucumber with the yogurt, lemon juice, olive oil, garlic, salt, and pepper. Mix well and let it sit for at least 20 minutes to allow the flavors to meld.
3. Make the Salad:
- Mix the diced cucumbers, tomatoes, onions, and parsley in a bowl. Season with salt and pepper to taste.
4. Cook the Chicken:
- Preheat an outdoor grill to medium-high heat or heat 1 tbsp oil in a fry pan over medium-high heat.
- Remove the chicken from the marinade and cook for 2-3 minutes per side until golden brown and fully cooked.
- Let the chicken rest for 5 minutes before slicing it.
5. Assemble the Gyros:
- Warm the pita or flatbreads, and fill them with grilled chicken, tzatziki, and the salad. Wrap and enjoy!
Recipe Notes:
Storage: Cooked chicken keeps well for up to 4 days in the fridge.
Tzatziki Sauce: It makes a generous amount, but it’s always better to have more!
Freezing: The marinated chicken can be frozen uncooked. Thaw, massage the marinade, and cook as instructed.
